Our Process
Where Heritage Meets Intention
Two Regions. One Intentional Spirit. Costa is crafted where heritage meets possibility. Every step is guided by balance, patience, and respect for the land and people behind the bottle. This is tequila made deliberately. Never rushed, never overworked. Designed to feel as effortless as golden hour.

The Hands Behind the Spirit
At the heart of Costa is Citlali Ovalle, our first-ever female Master Distiller. Born and raised in Jalisco, Citlali bridges the wisdom of generations with a bold, modern perspective. Her expertise defines our Hi/Lo™ blend, and her leadership shapes every step of our craft.
Through her, Costa becomes more than a spirit, it becomes a story of intention, innovation, and deep respect for tradition.
This mountainous region provides a softer, fruitier, and floral agave. These characteristics are represented in the initial aroma and taste of our tequila.
This low lying region provides an earthier, peppery and herbal agave. These characteristics are represented in the silky texture of our tequila, along with a hint of pepper in the after taste.

Agave Sourcing
Costa is made with 100% Blue Weber agave from two regions of Jalisco: the Highlands and the Lowlands. Highland agave brings bright, floral, fruit-forward character. Lowland agave adds earthiness, texture, and a subtle peppery finish. Blended together, they form Costa’s signature Hi/Lo™ balance.

Harvesting
Agaves are hand-harvested by skilled jimadores at full maturity, typically between 7 to 9 years of growth. Each piña is selected for ripeness and sugar content before entering production.

Cooking
The agave hearts are slow-cooked in traditional brick ovens (hornos) for 55 hours, allowing fibers to soften and natural sugars to fully develop — preserving agave character and building a smooth, rounded profile.

Extraction & Fermentation
After cooking, the agave is milled to extract its sweet juices, maintaining balance and clarity before fermentation. Then, extracted juices undergo a controlled fermentation lasting 2–3 days, where yeast converts sugars into alcohol while developing body and texture.

Distillation
Costa is distilled twice in copper pot stills, refining the spirit while preserving aroma and flavor. The result is a clean structure with a refined, expressive mouthfeel.

Aging & Expressions
One Process. Four Paths. Each Costa expression reflects a different moment in time.
Blanco: Unaged. Bright, mineral, and fluid. A pure expression of the Hi/Lo™ blend.
Reposado: Aged 8 months in American oak barrels, adding warmth and subtle sweetness.
Añejo: Aged 16 months in American white oak, revealing deeper notes of caramel, vanilla, and roasted agave.
Café: An infusion of premium Costa Blanco and 100% Mexican coffee, crafted for versatility.

Bottling
Each batch is proofed to 40% ABV, lightly filtered, and bottled in small runs. We prioritize natural integrity, leaving our core expressions entirely unadulterated. What you taste is the spirit in its truest form.
